all zones come on

When the guy came to blow out my sprinklers, the air from the compressor forces open all the valves so the system is not able to be blown out properly. Why is this happening? When water is flowing through it the valves open and close when they are supposed to just not with the air.

You probably have a master valve in your system, and that can make using a smaller compressor more difficult.

A photo of your zone valves might help with further diagnosis.
